Wild Mushroom Quinoa

When we started adding recipes to our blog we told ourselves that we were going to create simple recipes that anyone can make at home. Nothing unnecessarily complicated, or fancy, just our favourite dishes that we make on a regular basis for dinner or lunches for work. Diva #1 has lunch with Whitey almost every day at work, and she gave her the idea to start writing out her simple healthy lunch recipes that she often asks her for. This wild mushroom quinoa is perfect to pack for your lunch at work! Microwave it, and then top it with crumbled feta and toasted walnuts.

Wild Mushroom Quinoa

Ingredients:

  • 1 ½ cups quinoa, uncooked
  • 1 ½ lb / 680 g wild mushrooms
  • 3 garlic cloves, minced
  • 2 tbsp salted butter
  • 1 tbsp olive oil
  • Splash of white wine
  • 5 green onions, finely chopped
  • 283 g baby spinach
  • Salt and pepper
  • Chilli pepper flakes
  • ¼ cup Italian parsley, chopped (heaping)
  • ½ cup Feta, crumbled (or goat cheese)
  • ½ cup walnuts, toasted

Directions:

  1. Cook quinoa according to package instructions and set aside
  2. Heat butter and olive oil in a large skillet over medium-high heat. Cook mushrooms and garlic for about 5 minutes
  3. Add a splash of wine
  4. Add chopped green onions, chili peppers, and salt and pepper to taste
  5. Reduce heat to low, add fresh spinach, cover the skillet and cook until it begins to wilt
  6. Add quinoa and stir, cook for another minute
  7. Remove from heat, add parsley and stir
  8. Serve with toasted walnuts and crumbled feta (or goat cheese) sprinkled on top
  9. NOTE: We used Portobello and cremini mushrooms but you can use your favourites!
