Whole Roasted Fish

Ever wanted to cook a whole fish like they do on cooking shows or in restaurants? It seems like a daunting task, but the Divas have you covered! We used rainbow trout for our recipe but you can easily substitute the rainbow trout with other fish like snapper.  If you want to add more herbs like savory or dill, you can do that as well, this recipe is rather flexible.

Whole Roasted Fish

Ingredients:

  • 1 (2-3 lb) whole fish (we used rainbow trout)
  • Salt and pepper
  • 1 lemon, thinly sliced
  • 2 tbsp Italian parsley, chopped
  • 2 cloves garlic, thinly sliced
  • 1 shallot, thinly sliced
  • 4-5 slices prosciutto
  • Olive oil

Directions:

  1. Salt and pepper the cavity of the fish
  2. Stuff the cavity of the fish with the lemon slices, parsley, shallots, and garlic
  3. Lay the slices of prosciutto on your cutting board, allow the slices to overlap
  4. Place the fish on the bed of prosciutto, and wrap the prosciutto slices around the fish
  5. Place a piece of parchment paper on a baking sheet with a drizzle of oil, and place the fish on the oil
  6. Bake at 425 F for 25-30 minutes
