Tomato Sauce

Nothing says comfort food quite like tomato sauce! We love a beautiful plate of al dente linguine, covered in tomato sauce, with tons of parmigiano cheese and chili peppers. Tomato sauce is so versatile, sometimes we add anchovies and capers for that salty finish, or a touch of cream to make it rosé. This is our favourite tomato sauce recipe, and you can freeze the extra sauce since it makes quite a lot.

Tomato Sauce

Ingredients:

  • ROASTED GARLIC:
  • 1 garlic head
  • ½ tbsp extra virgin olive oil
  • Salt and pepper
  • SAUCE:
  • ¼ cup extra virgin olive oil
  • 2 white onions, chopped
  • 2 tbsp double concentrated tomato paste
  • 2 cans (796ml) ground tomatoes, we use Pastene Tomatoes
  • 2 bay leaves
  • ½ tsp chili pepper flakes
  • Salt and pepper
  • 1 tsp sugar
  • 1 cup basil leaves, tightly packed, we like a lot of basil

Directions:

  1. ROASTED GARLIC: Preheat oven to 350 F
  2. Remove the garlic head’s loose skin, and slice off the top of the garlic head to expose the cloves within
  3. Coat the garlic head with extra virgin olive oil and a dash of salt and pepper
  4. Either envelope the oily and seasoned head of garlic in aluminum foil or place it in a garlic roaster
  5. Cook garlic for 30-45 minutes and remove the roasted cloves from the remaining skin. Set aside
  6. SAUCE: Heat olive oil on medium high heat and cook onion with tomato paste until soft, about 5 minutes
  7. Add tomatoes, bay leaves, chili pepper flakes, and salt and pepper and stir
  8. When the sauce comes to a boil, reduce the heat to low and loosely cover the pot with a lid, allowing some air to escape
  9. Cook for 45 minutes, stirring occasionally
  10. Discard bay leaves. Add sugar, roasted garlic, and basil leaves; combine
  11. Using an emulsion blender, regular blender or food processor blend the sauce until desired consistency is reached
