Sweet Pea’s Zany Zoodles

We used Hamilton Beach’s 3-in-1 Electric Spiralizer to create our zoodles. Adding ribbons of vegetables, affectionately called zoodles, can either enhance a dish or replace pasta for a healthy alternative. The Hamilton Beach’s 3-in-1 Electric Spiralizer comes with a spiral cutter, ribbon cutter and grater; we used the spiral cutter for this recipe!

This recipe calls for pesto, instead of buying your pesto from the grocery store, make your own! Pesto is so easy to make and it tastes delicious when homemade. Click HERE if you want to use our fabulous pesto recipe. If you don’t want your pesto to be creamy, remove the avocado from our recipe!

  • Difficulty: easy
  • Recipe type: Main

  • 5 medium to large zucchini
  • 500 g shrimp
  • 4 chorizo sausages
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil (if required)
  • 2 tbsp coconut oil
  • 3 garlic cloves, minced
  • Pesto
  • Salt and pepper

  1. Use a spiralizer to make the zucchini into zoodles by trimming the ends of your zucchini and placing the zucchini in the spiralizer. See your spiralizer’s instructions for more details
  2. Add a 1 tbsp of coconut oil to a pan on high heat. Cook zoodles until they have softened but still have some bite
  3. Strain the zoodles in a sieve while you continue cooking. Zoodles expel a lot of water after cooking, so leave them in the sieve for about 15 minutes
  4. Add 1 tbsp coconut oil to your pan on high heat. When the oil is hot, cook the minced garlic. Add shrimp
  5. When the shrimp are cooked halfway through, add the cherry tomatoes. Once the tomatoes have softened and the shrimp are pink, set aside
  6. You can choose to either grill or pan-fry your chorizo. If pan-frying, add 1 tbsp of olive oil. Once cooked, cut chorizo into disks and set aside
  7. In a large pan, combine the shrimp, chorizo, cherry tomatoes, and noodles. Add pesto sauce. We like to be generous with the pesto, but adjust to taste
  8. Season with salt and pepper
