Salsa is one of those things that is so easy to make but yet most people simply buy ready-made. We are not one of those people, we love fresh salsa, it’s perfect for parties or when you have friends over for cocktails. We use a mix of canned and fresh tomatoes for the perfect consistency and flavour! Ingredients:

  • 1 can (28 oz) whole tomatoes
  • 1 red onion, roughly chopped
  • 2 jalapeno peppers, seeded and roughly chopped
  • 3 cloves garlic
  • ½-1 tsp cumin
  • ½ tsp salt
  • ½ tsp sugar
  • 2 handfuls cilantro
  • 2 limes, juiced
  • 1 pint cherry tomatoes, quartered
  • 2 green onions, finely chopped
  • Tortilla chips, to serve

Directions:

  1. Add everything but the pint of cherry tomatoes, green onions and tortilla chips in a blender or food processor and pulse until desired consistency is reached. We like our salsa to be a little chunky
  2. Pour salsa into a mixing bowl. Add chopped cherry tomatoes and green onions, stir
  3. Taste the salsa and adjust seasoning to taste
  4. In an airtight container refrigerate for at least 1 hour to optimize flavour
  5. Serve with tortilla chips
