Pesto Shrimp Pasta

If your garden is overflowing with fresh basil, then our Pesto Shrimp Pasta dish is definitely the dish for you! We like to jazz up our pesto sauce with a few added ingredients like toasted walnuts, some onion, and an avocado for added creaminess. You can replace the shrimp with grilled chicken or even steak, we even like pesto as a condiment in a sandwich, or with grilled vegetables. It’s very versatile!

Pesto Shrimp Pasta

Ingredients:

  • 1 lb / 453 g linguine
  • 1 lb / 453 g shrimp
  • 2 tbsp butter
  • 1 cup basil, tightly packed
  • ¼ cup Italian parsley, tightly packed
  • 1 tbsp lemon juice
  • 4 garlic cloves
  • 1 green onion
  • ¼ cup walnuts, toasted
  • 1 avocado
  • ¼ cup parmigiano
  • ¼ cup extra virgin olive oil
  • Salt and pepper
  • 1 avocado
  • Chili pepper flakes

Directions:

  1. Cook the linguine according to the package directions to al dente. Reserve 3 tbsp of pasta water and strain linguine
  2. Sauté the shrimp with butter until pink and cooked through
  3. In a blender combine the basil, Italian parsley, lemon juice, garlic, green onion, walnuts, avocado and parmigiano
  4. Blend until smooth while gradually adding the olive oil. , Add more if desired consistency is not met
  5. Season with salt and pepper to taste and stir in the reserved pasta water
  6. Toss half the pesto in the pot with the shrimp, stir in the linguine, and add more pesto until the linguine is coated. Season with plenty of chili pepper flakes and serve
