Orange Almond Muffins

Sweet Pea’s Momma Bear makes the most delightful Orange and Almond Muffins that are bursting with plenty of citrus flavour. She actually throws a whole orange in the blender, peel and all! She kindly (and surprisingly) gave us her recipe; it’s definitely one of our favourite muffin recipes. Perfect for breakfast or a midday snack!

Orange Almond Muffins

  • 1 orange
  • ½ cup freshly squeezed orange juice
  • 1 egg
  • ½ cup unsalted butter, melted
  • ½ cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¾ cup sugar
  • ½ tsp salt
  • 12 muffin liners
  • Sliced almonds


  1. Cut entire orange (peel and all) into pieces, remove seeds and pulse in blender until peel is soft
  2. Add orange juice, egg and melted butter. Pulse
  3. In a bowl mix the flour, baking soda, baking powder, sugar and salt
  4. Pour liquid mixture over dry ingredients and mix until combined
  5. Place 12 muffin liners in muffin pan(s). Divide the batter into the 12 liners in the muffin pan(s)
  6. Sprinkle with almonds and cook for 15 minutes at 400 F, rotate midway
