Mediterranean Quinoa Salad

When we started adding recipes to our blog we told ourselves that we were going to create simple recipes that anyone can make at home. Nothing unnecessarily complicated, or fancy, just our favourite dishes that we make on a regular basis for dinner or lunches for work. Diva #1 has lunch with Whitey almost every day at work, and she gave her the idea to start writing out her simple healthy lunch recipes that she often asks her for. This Mediterranean Quinoa Salad is perfect to pack for your lunch at work, or as a side dish to your dinner!

Mediterranean Quinoa Salad

  • 1 cup quinoa, uncooked
  • 2 zucchinis, sliced lengthwise
  • 2 red peppers, quartered
  • 1 can (540 ml / 19 fl. oz) chick peas
  • 1 cup Kalamata olives, pitted
  • 2-3 green onions, chopped
  • ¾ cup Italian parsley, finely chopped
  • 2 cups feta cheese, crumbled
  • 1/3 cup olive oil
  • 1-2 lemons, juiced
  • 1 ½ tsp oregano, dried
  • Salt and pepper


  1. Cook quinoa according to package directions and set aside
  2. Grill or pan fry zucchini and red peppers, chop into bite size pieces after they’re cooked, and set aside
  3. In a large bowl add quinoa, cooked zucchini, cooked red peppers, chick peas, Kalamata olives, green onions, Italian parsley and feta cheese. Stir
  4. In a small bowl whisk olive oil, lemon juice, oregano, and salt and pepper. Pour over quinoa salad and adjust seasoning
