Lemon Artichoke Pasta

In the summer, no one wants to cook and heat up the house so we’re always looking for new ways to beat the heat. That includes fun summer recipes that aren’t too much work! The sauce for this dish is essentially an artichoke and parsley pesto.  Mix it with pasta and you have yourself a great, light summer-time meal!

Lemon Artichoke Pasta

Ingredients:

  • 454g penne (or any short pasta)
  • 1 can (15 oz) artichoke hearts, chopped
  • ½ cup extra virgin olive oil
  • 2 garlic cloves, minced
  • ¼ cup Italian parsley, finely chopped
  • 1 tbsp lemon juice
  • 1 lemon, zest
  • Salt and pepper
  • Parmigiano, to serve

Directions:

  1. Cook pasta according to the package directions to al dente
  2. Combine all other ingredients in a food processor or blender, and blitz until almost smooth but still a little chunky
  3. Adjust seasoning to taste. If you find the mix too thick, simply add a teaspoon of water or more lemon juice to loosen it up a bit
  4. Toss with pasta
  5. Serve with plenty of Parmigiano
