Bellatrix’s Caramelized Onion Pizza

Always a crowd pleaser, Bellatrix always brings a heaping plate of her Caramelized Onion Pizza to every party! She got tired of us being asked to make it, so she gave us her recipe so that we can give her a little break. We came close to perfecting it, but Bellatrix adds that extra sprinkle of love. Sorry Bellatrix, we’re not done asking you to bring your pizza to our next party!

Bellatrix’s Caramelized Onion Pizza

Ingredients:

  • CRUST:
  • 2 cups all-purpose flour, more for rolling the dough
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ cup 3.25% milk
  • ¼ cup extra virgin olive oil
  • 2 tbsp salted butter
  • TOPPING:
  • 2 tbsp salted butter
  • 2 tbsp extra virgin olive oil
  • 4 white onions, thinly sliced
  • ½ tbsp thyme
  • 1 tsp sugar
  • Salt and pepper
  • Chili pepper flakes
  • ½ cup parmigiano, grated
  • Basil leaves, chopped

Directions:

  1. Preheat oven to 425 F
  2. CRUST: Stir together the flour, baking powder and salt. Make a well in the center of the dry ingredients
  3. Whisk the milk, olive oil and melted butter. Slowly pour the liquid mixture into the well, stirring just until blended
  4. Turn out the dough on a lightly floured work surface and roll into a 10 X 13” rectangle. Transfer to a cookie sheet of that size and using your fingers mold the dough until it is even in the cookie sheet. Pierce the dough all over with a fork
  5. TOPPPING: In a large skillet over medium heat melt the butter and olive oil. Add the onions and cook, stirring frequently until softened for about 10 minutes
  6. Add the thyme, sugar, chili pepper flakes, and salt and pepper to taste. Reduce the heat to low and cook, stirring frequently, for about 20 minutes
  7. Spread the onion mixture over the dough, sprinkle with parmigiano and bake until the crust is golden for about 20 minutes
  8. Allow to cool for 10 minutes, sprinkle with fresh basil leaves, and cut pizza into squares
  9. NOTE: You can make this pizza the night before up until you’re supposed to cook it in the oven. Cover the cookie sheet with plastic wrap and cook it the next day to optimize freshness
