Balsamic Glazed Carrots

We love an easy and impressive side dish that makes something ordinary, like carrots, taste extraordinary! We use rainbow carrots that not only make for a gorgeous side dish with their burst of colour, but they’re often fresher. Large overgrown carrots often lack in flavour whereas the smaller variety, most often from small farmer’s markets, with their grassy tops still intact, usually taste better.

  • 2 lb carrots, peeled with tops removed
  • 4 tbsp fresh thyme, just leaves
  • ¼ cup balsamic vinegar
  • ¼ cup Canadian maple syrup
  • 6 tbsp extra virgin olive oil
  • Salt and pepper


  1. Lay the carrots in a single layer on a baking dish
  2. Mix remaining ingredients in a small bowl and pour the mixture over carrots
  3. Ensure that the entire carrot has been in contact with the mixture
  4. Cook at 350 F for 1 hour until carrots are tender and easily pierced with a fork
