Diva #1’s apartment is known as The Vortex amongst her friends from Ville St-Laurent (St-Lau). It’s the perfect spot for pre drinking before everyone goes out, or for partying all night, or the house everyone returns to for late night eats after partying – needless to say a lot of people have passed out in a drunken slumber in The Vortex. But Diva #1 hates cooking breakfast when hungover, so this Tater Tot Breakfast Bake is perfect because you can make it from the night before. It’s simple, in the morning just toss it in the oven while you’re nursing your hangover – and your whole house won’t smell like La Belle Province, which is what usually happens to us because we love deep frying breakfast hash browns!

  • Half pack of bacon (oh just put it all!), cooked and crumbled
  • 1 package (453g) Breakfast sausage, remove casing
  • 3 cups cheddar cheese, shredded
  • 2 cups whole milk (3.25%)
  • 5 eggs
  • ½ tsp onion powder
  • 1 package (1 kg) frozen tater tots
  • Thyme leaves, to taste
  • Hot sauce, to taste
  • 3 green onions, chopped
  • Salt and pepper


  1. Cook ground sausage meat on medium high heat. Drain and layer at the bottom of a baking pan
  2. Sprinkle 2 cups of cheese over the cooked sausage
  3. In a large bowl whisk the milk, eggs, salt, pepper, onion powder, hot sauce and fresh thyme. Once mixed, pour into baking dish on top of the sausage and cheese
  4. Layer with chopped green onions, and frozen tater tots on top
  5. If not baking right away, cover with foil and refrigerate overnight (we love this part!)
  6. When ready to bake, set oven to 350 degrees and baked for about 35 minutes
  7. Top with remaining 1 cup of cheese, cooked and crumbled bacon and bake for another 5-10 minutes until the top browns
