Sweet Pea’s Strawberry Ginger Mojito

We wish you knew Sweet Pea the way we did, she’s actually really sweet and lives up to her name, but age, along with abuse by Diva #1, are wearing her down. These days she is getting rather mouthy and P’tit Soeur has complained that she’s even a little aggressive. We’re shocked but we’ll imprison her for another month, and her Stockholm syndrome will be fine-tuned back to unquestionably loving Diva #1 all over again.

In May she was still feeling loving and she created this magnificent strawberry and ginger mojito cocktail for Diva #1’s birthday. The best part of this recipe is that instead of simple syrup, it asks for ginger syrup, which makes the mojito less sweet and a touch tangier. It’s marvelous, just like Sweet Pea! Of course you should always serve your mojito with oysters, but that dear readers, is up to you.

Sweet Pea’s Strawberry Ginger Mojito

  • ¾ cup ginger, peeled and thinly sliced
  • 1 cup sugar
  • 1 cup water
  • 1 ½ cup loosely packed mint leaves
  • ½ pint ripe strawberries, quartered, and more for garnish
  • 2 cups white rum
  • 4 limes, juiced
  • 2 cups Soda, or less
  • Ice
  • Oysters, if you’re wise


  1. Bring ginger, sugar and water to a simmer in a small saucepan over medium-low heat
  2. Stir until sugar has dissolved, then simmer uncovered for 30 minutes
  3. Strain syrup through sieve, then cool to room temperature
  4. Muddle mint leaves and strawberries in a pitcher
  5. Add lime juice, rum, and 2/3 cup cooled ginger syrup, stir vigorously
  6. Add ice and top pitcher with soda, may be less than 2 cups
  7. Garnish with lime wedges and extra strawberries, if desired
  8. Serve next to dozens and dozens of oysters, if you’re so inclined
