Smoked Salmon Salad

Salad doesn’t only mean lettuce, tomatoes, onion and cucumber, nor is salad only a side dish! In the warm summer months we love enjoying salads for lunch, but the salad needs to be hearty or we’ll get ravenous and unstable soon after lunch. Our favourite salad is this Smoked Salmon salad that is full of smoked salmon and chickpeas for protein, and tons of vegetables and fresh herbs. We just listed the salad ingredients since the amount of each ingredient is really about preference, we just think that this combination is delicious!

Smoked Salmon Salad

Ingredients:

  • DRESSING:
  • ½ bunch coriander
  • 2 garlic cloves
  • 1 ½ tbsp lemon juice
  • ⅓ cup extra virgin olive oil
  • 2-3 tbsp water
  • Salt and pepper
  • SALAD:
  • Arugula
  • Romaine lettuce, chopped
  • Mint, finely chopped
  • Lebanese cucumbers, chopped
  • Cherry tomatoes, halved
  • Red onion, finely sliced
  • Chickpeas, rinsed and drained
  • Avocado(s)
  • Pumpkin seeds
  • Smoked salmon
  • Salt and pepper

Directions:

  1. Combine all dressing ingredients in a blender and pulse until smooth. Set aside
  2. Toss the arugula, romaine lettuce and mint in a large salad bowl
  3. Add cucumbers, tomatoes, onion and chickpeas. Toss again
  4. Add some of the salad dressing and toss until evenly coated, add more if necessary
  5. Put salad in individual bowls, and top with avocado, smoked salmon and pumpkin seeds
  6. Sprinkle with salt and pepper, and serve
