We tried blending it for longer in the food processor, adding more lemon juice and water, and using an emulsion blender. Alas, nothing made our hummus as creamy as we would have liked it to be! If you don’t have the will or the time to boil chickpeas, the canned variety will work just fine. The secret is in shelling each individual chickpea, yes it’s time consuming, but it’s worth it. It adds a finishing touch to your hummus and it will help it stand apart from the rest. We like to enjoy our hummus with fresh pita or pita chips, but if you’re feeling healthy it’s absolutely delicious with raw broccoli or carrots.

Roasted Garlic Hummus

Ingredients:

  • ROASTED GARLIC:
  • 1 garlic head
  • ½ tbsp extra virgin olive oil
  • salt and pepper
  • HUMMUS:
  • 1 can (19 oz) chick peas, shelled
  • 1 large lemon, juiced
  • 2-4 tbsp tahini
  • ½ tsp salt
  • ¼ cup extra virgin olive oil
  • ¼ tsp cumin
  • 3 tbsp water, or reserved chickpea liquid
  • Paprika, optional

Directions:

  1. ROASTED GARLIC: Preheat oven to 350 F
  2. Remove the garlic head’s loose skin, and slice off the top of the garlic head to expose the cloves within
  3. Coat the garlic head with extra virgin olive oil and a dash of salt and pepper
  4. Either envelope the oily and seasoned head of garlic in aluminum foil or place it in a garlic roaster
  5. Cook garlic for 30-45 minutes and remove the roasted cloves from the remaining skin. Set aside
  6. HUMMUS: Blend roasted garlic cloves, and all hummus ingredients save for 2 tbsp of tahini and the water in a blender or food processor for at least 1 minute until smooth. NOTE: Start with 2 tbsp of tahini, and add more if necessary, adjust to taste
  7. Add water, 1 tbsp at a time until desired thickness / thinness is achieved, sometimes we don’t add any water at all
  8. Taste and check seasoning, and add more salt, lemon juice or cumin, to taste
  9. Serve with paprika sprinkled on top, optional
