Refreshing Seafood Salad

Spring is here and that means two things:

  1. We need to start eating healthier to be bikini ready (right now we’re not!)
  2. It’s getting warmer and we want spring / summer recipes – Bye Bye soups and stews 😉

If you know the Divas you know that we never do healthy if it isn’t god damn delicious. This refreshing seafood salad is just that, it’s healthy but more importantly, it tastes amazing, with orange and strawberries for sweetness, shrimp and crab for a filling protein, avocado for creaminess and a whole bunch of other ingredients that come together perfectly. Healthy never tasted this good!

  • 1 tbsp clarified butter
  • 1 garlic clove, minced
  • ½ lb shrimp, peeled and deveined
  • ½ lb crab, roughly chopped
  • 1/3 cup olive oil
  • 1 lime, juiced
  • 2 tsp honey Dijon mustard
  • ½ – ¾ red pepper, julienned
  • 2-3 Lebanese cucumbers, sliced
  • ½ red onion, thinly sliced
  • 8 cups mixed greens or romaine lettuce
  • 3 tbsp mint, finely chopped
  • 3 tbsp cilantro, finely chopped
  • Salt and pepper
  • Chili pepper flakes
  • ½ cup strawberries, sliced
  • 2 oranges, peeled, pith removed and sliced
  • 1 avocado, sliced
  • ¼ cup almonds, toasted


  1. Melt the clarified butter in a pan, toss in the minced garlic clove for 15 seconds and add shrimp
  2. Cook shrimp on both sides until pink, add crab meat and cook for 15 seconds. Remove from heat and set aside until cooled to room temperature
  3. In a small bowl mix together the salad dressing: olive oil, lime juice and honey Dijon mustard. Set aside
  4. In a large bowl toss red pepper, cucumbers, onion, mixed greens, mint and cilantro
  5. Drizzle on salad dressing, and sprinkle on chili pepper flakes, and salt and pepper. Toss until the salad is coated with dressing. Taste and adjust seasoning
  6. Serve in four bowls, dividing the sliced strawberries, orange and avocado along one side of the bowl
  7. Arrange the now room temperature shrimp and crab along the other side of the bowl
  8. Top with toasted almonds and serve
