P’tit Soeur is kind of a brat! She’s always complaining and telling Diva #1 and Sweet Pea to cook for her, take her somewhere, do this, or do that. She throws things at people when she’s annoyed, gets crabby, and is generally a typical little sister. But lately we discovered that she’s so much more than a pretty face (at least she has that going for her) – we discovered this on Easter when she made a delectable Chocolate Soufflé for the family! We suppose that she’s here to stay…

P’tit Soeur’s Chocolate Soufflé

  • 4 oz / 113 g semi-sweet chocolate
  • ½ cup unsalted butter, more for buttering the ramekins
  • 2 egg yolks
  • ¼ cup icing sugar, more for serving
  • 2 tsp flour
  • White sugar
  • Berries, to serve


  1. Melt the chocolate and butter in a double boiler or microwave
  2. Using an electric mixer, beat the egg yolks and icing sugar until fluffy, approximately 6 minutes
  3. Pour in the chocolate mixture while still warm, and mix well
  4. Add flour and mix until incorporated
  5. Butter the ramekins and lightly coat with white sugar
  6. Pour the chocolate mixture into the ramekins and refrigerate for 4 hours
  7. Cook at 450 F for 8-10 minutes, the interior of the chocolate soufflé should not be cooked
  8. Remove from ramekins, sprinkle with more icing sugar, and serve with berries
