No Bake Berry Cheesecake

Sometimes a hot kitchen is the last thing that we want, especially in the summer!  But nothing will stop us from cooking and baking … well you can’t really call this baking, but you get where we’re going with this! This no-bake cheesecake is a great dessert to make, not bake, especially during berry season. We make it in 8 individual ramekins, which is prettier and cleaner than one large cheesecake that you have to cut, the Divas are crafty like that!

  • 1 ⅓ cup graham cracker crumbs
  • ⅓ cup melted butter, salted
  • 1 8 oz (226 g) package of cream cheese, room temperature
  • ½ cup white sugar
  • 1 tsp vanilla
  • 2 tsp lemon zest
  • 1 cup of heavy whipping cream
  • Package of amaretti cookies, crushed into crumbs
  • Strawberries, hulled and sliced (or any berries)
  • Splash of Limoncello


  1. To make the crust, stir the graham cracker crumbs and melted butter until they come together in a sticky mixture. Fill each individual ramekin (we used jars) with approximately 1 tablespoon of the crumb mixture, pressing down firmly to form a crust
  2. Put the berries in a bowl and generously splash them with limoncello. Set aside
  3. Using an electric mixer, whip the cream cheese and sugar until smooth
  4. Add the vanilla and lemon zest, and keep mixing
  5. In another bowl, whip the whipping cream until soft peaks form
  6. Fold half the whipping cream into the cream cheese mixture. Fold in the other half
  7. To assemble the individual ramekins, spoon about 1 tablespoon of the cheesecake filling on the bottom layer of graham crust. Add some berries. Add another layer of the graham crumbs. Add another layer of the cheesecake filling. Top with berries and crushed amaretti cookies.
  8. Place in the fridge for at least 1-2 hours before serving
