Melitzanosalata aka Greek Eggplant Dip

Melitzanosalata is a Greek Eggplant Dip that is traditionally served with pita bread or crusty bread as an appetizer. Make sure that you use good quality extra virgin olive oil, it really makes a difference in a recipe with such few ingredients like this one. Greeks love serving Melitzanosalata with pickled herring, cured anchovies, Kalamata olives or salty cheeses like feta.

Melitzanosalata aka Greek Eggplant Dip

Ingredients:

  • ROASTED GARLIC:
  • 1 garlic head
  • ½ tbsp extra virgin olive oil
  • Salt and pepper
  • MELITZANOSALATA:
  • 2 eggplants
  • 2 lemons, juiced
  • ¼ cup extra virgin olive oil, more to serve
  • ½ red onion, finely chopped
  • ¼ cup Italian parsley, finely chopped
  • Salt and pepper
  • Pita bread, to serve

Directions:

  1. ROASTED GARLIC: Preheat oven to 350 F
  2. Remove the garlic head’s loose skin, and slice off the top of the garlic head to expose the cloves within
  3. Coat the garlic head with extra virgin olive oil and a dash of salt and pepper
  4. Either envelope the oily and seasoned head of garlic in aluminum foil or place it in a garlic roaster
  5. Cook garlic for 30-45 minutes and remove the roasted cloves from the remaining skin. Set aside
  6. MELITZANOSALATA: Preheat the oven to 400 F, prick the eggplant evenly all over with a fork
  7. Bake for 30-40 min on a baking sheet, turn at 15 minutes, and cook until very tender
  8. Remove the skin and discard. In a mixing bowl place the skinless eggplant, lemon juice, roasted garlic cloves, olive oil, red onion, and salt and pepper
