Daddy’s Potato Salad

Potato salad is a classic staple at a summer BBQ and Diva #1’s Daddy makes the absolute best potato salad. So much more than just mayonnaise and potatoes, this potato salad has pickles for some nice acidic crunch, hard boiled eggs for added creaminess, and both ham and bacon. Daddy has moved to Greece but Diva #1 is still making his potato salad every summer at various barbecues! Daddy’s Potato Salad

  • 15 white potatoes
  • 1 lb /453 g (1 pack) bacon
  • 6 kosher dill pickles, diced
  • 8 eggs, hard boiled
  • ½ lb ham, diced
  • 4 green onions, chopped
  • Mayonnaise
  • Mustard
  • Ketchup
  • Salt and pepper


  1. Boil potatoes, they’re ready when they can be easily pierced. Toss them in cold water, strain them and allow them to dry, peel them with your hands, and cube them
  2. Cook bacon until crispy, chop it up and toss it in large bowl with cubed potatoes
  3. Chop up eggs and add them to the bowl with pickles, ham and green onions
  4. Add enough mayonnaise to coat the potato salad ingredients. There should be 2-3 times more mayo than mustard and ketchup. The ketchup should make it a slight pink color and there should be the same amount of mustard
  5. Add salt and pepper, stir and adjust to taste
