Cucumber Gin Cocktail

Bombay Sapphire came out with a fabulous new gin called the Star of Bombay! We went to the Star of Bombay Event at HVOR in Montreal and had a fabulous introduction to this premium gin, but the best part is that they gave us a bottle to take home. We found an interesting exotic cocktail recipe in our Bon Appétit magazine that we had to try with the Star of Bombay gin. We made some changes, and though it seems like this is a lot of gin for one cocktail, the Star of Bombay is so smooth that you’ll want more… or we’re alcoholics, to each his own!  If you have trouble finding kaffir lime leaves, check any Asian grocery store, kaffir lime leaves are predominantly used in Asian cuisine.

  • 1 English cucumber, peeled
  • 2 lemon wheels
  • 5 kaffir lime leaves
  • 2 tsp sugar
  • 4 oz Star of Bombay Gin
  • 1 oz lime juice, freshly squeezed
  • Club soda


  1. Using a vegetable peeler, shave 1 long thin ribbon from the English Cucumber
  2. Cut a 4” piece from the peeled cucumber, and chop it up
  3. Muddle the cucumber with the lemon wheels, kaffir lime leaves and sugar in a cocktail shaker
  4. Add gin, lime juice and ice, shake for about 20 seconds. Strain into a tall glass with ice, and top with club soda
  5. Stir to combine, and garnish with the cucumber ribbon and kaffir leaves
