Creamy Tomato Soup with Avocado

What’s the perfect accompaniment to a grilled cheese sandwich? Definitely tomato soup! But we like to make things decadent, so we opted for a creamy tomato soup with smoky avocado for more flavour. Creamy Tomato Soup with Avocado

  • ¼ cup unsalted butter
  • 10 sprigs of thyme, remove leaves
  • 1 large onion, thinly sliced
  • 2 garlic cloves, thinly sliced
  • ¼ cup tomato paste
  • 2 large cans of San Marzano whole tomatoes
  • 4 cups chicken stock
  • 4 cups water
  • 3 tsp sugar
  • ½ cup cooking cream
  • Chili pepper flakes, to taste
  • Salt and pepper, to taste
  • 4 avocados
  • Italian bread crumbs
  • Parmesan cheese
  • 1 Green onion, chopped
  • 8-10 Basil leaves, chopped


  1. Melt butter in a large pot over medium heat. Add thyme leaves, onion, and garlic. Cook until onion is soft and translucent, about 10-12 minutes.
  2. Increase heat to medium-high and add tomato paste and cook for 5-6 minutes until paste has caramelized
  3. Add cans of tomatoes, 1 tsp sugar, chicken stock and water. Increase heat to high and bring to a simmer. Reduce heat to medium and cook for 1 hour
  4. Remove soup from heat and add chili pepper flakes, to taste
  5. Purée soup in blender and return to pot, or use an emulsion blender
  6. Stir in cream, simmer soup for another 10-15 minutes, season with salt and pepper, and add the remaining 1 tsp of sugar, if desired
  7. Remove the pit and the casing of the avocado, place half of an avocado in the center of a bowl of soup without submerging
  8. Top the avocado with parmesan cheese and breadcrumbs – torch the top of the avocado for a smoky taste and to make the breadcrumbs crispy
  9. Top with fresh basil and green onions before serving
  10. NOTE: If you do not have a kitchen torch broil the avocado before adding it to the center of the soup
