Butter Chicken

How many times do you eat or order out, and you wish that you could make the same dishes at home?  We love Indian food so we thought we would try to recreate one of our favourite dishes, butter chicken.  And it’s a lot simpler than you might think, you just need a few key spices to make it better than take-out!

Butter Chicken

Ingredients:

  • MARINADE:
  • ¾ cup plain Greek yogurt
  • ½ lemon, juiced
  • 2 ½ tsp turmeric powder
  • 2 tsp garam masala
  • ½ tsp chili flakes
  • 1 tsp cumin
  • 3 cloves garlic, crushed
  • 3 chicken breasts, cubed
  • CURRY SAUCE:
  • 2 tbsp vegetable oil
  • 1 cup pureed tomatoes
  • 1 cup cooking cream
  • Salt
  • Basmati rice, to serve
  • Naan bread, to serve

Directions:

  1. Combine the ingredients for the marinade in a bowl, and pour it over the chicken in an airtight container. Cover and refrigerate overnight
  2. Using a large frying pan, heat the oil on high heat. Remove the chicken from the marinade leaving it drenched in its marinade.
  3. Cook the chicken for about 5 minutes
  4. Add the pureed tomatoes and season with salt
  5. Lower the heat to a simmer for approximately 20 minutes
  6. Add in the cream and stir. Adjust the seasoning if necessary, and remove from heat
  7. Serve with basmati rice and naan bread
