Banana Cream Pie Cups with Caramel Sauce

When a craving hits, you need to satisfy it.  That’s exactly how these individual banana cream pies came about.  There may be a lot of steps, but it’s a simple recipe and the pastry cream and caramel sauce can be used in other recipes too!

Banana Cream Pie Cups with Caramel Sauce

  • 2 cups milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar, divided
  • 1 pinch salt
  • ¼ cup cornstarch
  • 1 large egg
  • 2 large egg yolks
  • 2 tsp vanilla extract
  • 1 cup water
  • 1 cup white sugar
  • ½ cup butter, cut into squares
  • 1 cup 35% cooking cream
  • 1 tsp of pure vanilla extract
  • CRUST:
  • 1 ⅓ cup finely crushed graham cracker crumbs
  • 2 tbsp granulated sugar
  • ⅓ cup unsalted butter, melted
  • 4 bananas, sliced
  • Whipped cream


  1. PASTRY CREAM: In a saucepan, whisk the milk, cream, ¼ cup of the sugar and the salt; while bringing it to a light boil. Remove from heat and set aside
  2. In a mixing bowl, beat ½ cup sugar with cornstarch, egg and yolks. Beat until the mix becomes pale in colour. Beat in ⅔ cup of the warmed milk and cream mixture
  3. Pour the mixture back into the saucepan and whisk over medium heat to cook until it has thickened (it should be the consistency of pudding). Remove from heat and stir in vanilla
  4. Cover with plastic wrap pressed directly on the pastry cream so a skin doesn’t form while it cools in the fridge. Refrigerate until cold, and up to 3 days
  5. CARAMEL: Pour the sugar in a saucepan followed by the water. Turn the heat on high
  6. Let the sugar dissolve in the water, do not stir the saucepan When you see the first signs of colour (after 5-8 minutes), swirl the saucepan
  7. Let the sugar and water mixture continue to boil on high for another 10-15 minutes until it turns a golden colour
  8. When it turns golden, add in the butter and whisk until smooth
  9. Add in the cream and vanilla, stir and take the saucepan off the heat
  10. CRUST: Mix the graham crumbs and sugar together, add butter and stir
  11. Divide the graham crumbs into the individual ramekins and gently press down on the crumbs to form a crust
  12. Add a few slices of banana
  13. Add a layer of the pastry cream. Add more slices of banana on top of the pastry cream
  14. Drizzle some of the caramel sauce over the bananas
  15. Top with whipped cream and a couple banana slices to garnish with an extra drizzle of caramel sauce
